Chicken adobo is an iconic Filipino dish popular around the world. Adobo in the Philippines is a type of sauce, with each Filipino family making their adobo slightly different from the same base of soy sauce, garlic, and vinegar. The word comes from Spain, as the practice of marinating meats in adobo sauce was similar to Spanish cooking.
